I think it’s wonderful that you can throw 4 things into a pot — bacon, green beans, potatoes, and an onion— and turn out such a marvelous feast.
I don’t know why this recipe is just now making its debut on Lemon Egg. Did I forget about it? Forget how good it was? I really have no idea. But it’s here, and my family was delighted.
I’m guessing most of you already have your own version of this meal, and I’m not going to say this one is better than all the other versions, or anything like that. You might prefer different ratios, or different ingredients altogether — I’ve been known to throw in summer squash or use ham instead of bacon— But in case you don’t already have this recipe, or if you want a new version to try, here it is.
We’re using frozen green beans to shorten the cooking time, but feel free to use fresh green beans (especially in the summer months). Just leave more time to cook them— fresh green beans take longer to soften than frozen.

Bacon, Green Beans, & Potatoes
Cook time = 45 minutes

snap beans (if using fresh), peel onion
Ingredients
12 oz sliced bacon
4 Russet (Idaho) or red potatoes
1 small white or yellow onion
24 oz frozen green beans (I like this kind from Trader Joe’s)
Salt to taste (I used about 1/4 tsp)
Directions
Step 1
In a large pot with a well-fitting lid, cook the bacon strips over medium heat until crispy but not burned. (While the bacon cooks, prep the veggies in step 2). Set aside on a paper-towel-lined plate to drain.
Step 2
Peel and quarter the onion; wash and halve the potatoes, then cut into 1-inch chunks.
Step 3
After removing the bacon, add the potatoes and onion chunks to the pan; fry in the bacon grease for a few minutes over medium heat, stirring frequently, then reduce heat and cover. Cook for about 10 minutes on low.
Step 4
Add the green beans to the pan; increase heat and cover to bring to a simmer. Cook until the potatoes are tender and green beans are hot and bright green, about 15 minutes.
Step 5
Chop the bacon and return to the pan; stir well, taste for seasoning, and add salt if needed. Serve immediately.
