I love iced tea, I love lemonade, and I LOVE this berry Arnold Palmer made from freshly brewed tea, ginger beer, lemon juice, fresh blackberries, and homemade blueberry syrup.
This lemonade is perfect as-is, but it’s also delicious with bourbon— kind of like a blackberry mule. We served it at Noah’s 4th birthday party (sans alcohol for the kids, of course!) and everyone loved it!
Berry Arnold Palmer
Prep time: 20 minutes + 4 hours to chill
Serves: 10 (1 serving = ¾ cup over ice)
Ingredients
2-3 tea bags, for 3 cups of brewed tea (e.g. English breakfast, Lipton)
½ cup lemon juice (store-bought is fine!)
1 12 oz can of ginger beer
1 8 oz package of fresh blackberries
1 batch of blueberry syrup (recipe below)
Blueberry syrup:
1 ¼ cups of sugar
2 ½ cups of blueberries (fresh or frozen)
½ cup water
Tools
Small saucepan
Large (4-cup) heat-proof measuring cup (for brewing tea) (or use a second saucepan)
Large serving pitcher (the recipe makes about ½ gallon / 64 oz / 8 cups)
Fine mesh strainer (if you don’t want cooked blueberries floating in your drink, which, maybe you do! I prefer mine strained.)
Directions
Make the blueberry syrup: In a small saucepan, bring 2 ½ cups of blueberries and 1/2 cups of water to a boil, then lower to a simmer. Cook for about 10 minutes, then stir in 1 ¼ cups of sugar until dissolved. Allow to cool for a few minutes while you brew the tea (step 2).
Make the tea: bring 3 cups of water to a boil, then steep the tea bags for 5 minutes. Discard the tea bags and allow the tea to cool.
Once the syrup has cooled, strain out the blueberries (optional) and pour the syrup into the serving pitcher. Return the saucepan to the stove.
Add the blackberries to the saucepan with another ½ cup of water. Bring to a boil and cook for 1-2 minutes until the blackberries are bright and just starting to release their juices.
Add the blackberries, tea, ½ cup lemon juice, and a 12 oz can of ginger beer to the pitcher with the blueberry syrup. Stir gently to combine, then refrigerate for several hours until cold.
Serve over ice!
