Sea trout is divine— it’s similar to salmon, but it has an even milder, sweeter taste. I always get this kind from Aldi:
Plan to make this recipe the day or two after getting groceries so the fish will still be fresh— otherwise, stash it in the freezer and pull it back out when you’re ready.

It’s not a tricky recipe AT ALL. Prep includes minimal slicing, sprinkling of salt… and a little stirring of the pilaf, but then you just leave it to bake/simmer and walk away.
This recipe wows you with its simplicity. The mild sweetness of the trout pairs perfectly with the airy rice pilaf and zucchini— all 3 have gentle flavors that meld perfectly together for a light but filling meal.
