There are plenty of jarred sauces that I enjoy, but making Alfredo from scratch is truly worth it. It’s actually pretty easy to do and comes together quickly while the pasta and broccoli are cooking! Your family will be so impressed!
Fettuccini Alfredo with Broccoli

For Dietary Restrictions
Gluten free: substitute cornstarch for flour; dissolve it into the cold milk and add directly to the pan with the butter and cream.
Dairy free: I recommend following this recipe for vegan alfredo sauce!

Wash and separate broccoli florets, grate cheese
Ingredients
1 lb fettuccine noodles
½ tsp salt
3 broccoli crowns
1 Tbsp olive oil
For the Alfredo sauce:
3 Tbsp all-purpose flour
3 Tbsp butter
1 ½ cups whole milk
½ cup cream
½ tsp salt
Fresh black pepper
4 oz Parmigiano Reggiano (for 1½ - 2 cups grated)
Directions
Step 1
Preheat oven to 375 and set a large pot of water on to boil.
Step 2
Grate Parmigiano Reggiano (you’ll need 1½ - 2 cups) and set aside.
Step 3
Wash and chop (or break) broccoli florets apart and toss with 1 Tbsp olive oil. Spread in a sheet pan, sprinkle with salt, and roast 15-20 minutes until tender. Follow the remaining steps while broccoli is roasting; if broccoli is done before the pasta and sauce, cover to keep warm.
Step 4
Heat milk and cream together in the microwave or on the stove until steaming hot.
Step 5
In a 3-inch (5.5 quart) saucepan, melt butter over medium heat. Turn heat to medium-low and add flour a little at a time, incorporating with a fork or whisk. Stir continuously for a few minutes, allowing the roux to bubble and turn light brown.
Step 6
While whisking, slowly stream the hot milk and cream into the roux; mix until fully incorporated, then increase heat and allow to thicken.
Step 7
Turn off the heat and add 1 cup of cheese, pepper, and salt and combine thoroughly; taste and adjust seasoning if desired.
Step 8
Once the water is boiling, add ½ tsp salt and fettuccine noodles and cook until tender, about 10 minutes.
Step 9
Drain the pasta and serve immediately topped with the sauce, broccoli, and remaining cheese.
