Chicken Adobo is the national dish of the Philipines, and there are many different versions— some with coconut, some without; some with spicy peppers and others with peppercorns; some with long marinades and others with as little fuss as possible (guess which one this is?)

Yep, low-fuss: this version is easy enough for non-cooks to make, as it requires no advanced skills, no marinating, searing, or broiling. If you can make rice and simmer some chicken in a few pantry ingredients, you’re in luck.
This recipe makes enough for 8 kinda hungry people or 6 really hungry ones, and it makes great leftovers if you’re lucky enough to have them.
