I love grapefruit, and I love this grapefruit gin & tonic made from its zest & juice. (The zest is optional— it adds a more intense grapefruit flavor, but is also a little more work and time. Feel free to leave it out if you’re in a rush or if you want a milder flavor!)
This cocktail is perfect any time of year— it’s cold and refreshing in the summer, but I also love making it for holiday parties or NYE. Grapefruit are in season in the winter, so they’re at their sweetest and juiciest this time of year.
Notes:
~ This cocktail is a little on the sweet side. You can reduce the sugar to 1/3 or 1/2 cup if you want a little less sweetness!
~ If you opt for the zest as well as the juice, make sure to leave a little extra time to let the syrup cook and cool. An hour is plenty of time!
Grapefruit Gin & Tonic
Prep time: 30 minutes + 1 hour to cool
Serves: 4-6
Ingredients
For the cocktails:
8 oz gin (1/2 cup)
4 oz tonic water
1 batch of grapefruit simple syrup (recipe below)
Grapefruit simple syrup:
2/3 cup of sugar
Juice (and zest, optional) of 2 grapefruit
To garnish:
A third grapefruit, sliced

Small saucepan
4-cup glass measuring cup (or mixing bowl with spout)
Fine mesh strainer (if you don’t want pulp and zest floating in your drink, which, maybe you do! I prefer mine strained.)
Directions
Make the simple syrup: Zest and then juice two of the grapefruit. In a small saucepan, bring the juice and zest to a boil, then lower to a simmer. Cook for about 10 minutes to let the flavors meld, then stir in the sugar until dissolved. Allow to cool.
Once the syrup has cooled, pour it into a glass measuring cup (at least 4-cup size) or a mixing bowl with a spout. Stir in the gin and tonic water until combined.
Serve over ice garnished with a slice of grapefruit.
