Mattar Paneer simply means “peas and cheese” in Punjabi— paneer is a lovely, silky cheese that has a similar consistency to firm tofu (which is a cheaper option, as well as an easy substitution for my vegan friends.) The resulting sauce is mild, creamy, and flavorful— it feels like Indian comfort food. I definitely had more than one helping! Another perk: all of the ingredients are shelf-stable, so this one will keep if your plans change this week.
