As far as I know, there are not a lot of people who like oatmeal. And I don’t either— not the normal kind, anyway. Please don’t sign me up for mushy, instant oats OR the kind you have to boil forever, which are sure to boil over and leave a huge mess on my stove.
Enter steamed oats. From the microwave. They take 1 minute (literally 60 seconds) and come out tender, chewy, and perfect, like a bowl of al dente pasta, except that you’re smothering them with whatever combination of fruit, nuts, and cream that makes your heart sing.
Peaches & cream is a classic, but I also love these oats with fresh strawberries, cherries, or plums— the main caveat being that whatever fruit you are using must be in season. In the fall and winter, I like a combo of diced apples and raisins, or dried apricots and cranberries. You can even use a spoonful of jam in lieu of fruit, or frozen fruit (just heat it up along with the oats, adding maybe a minute or two of cooking time.)
I also love a savory bowl with the same oats, but topped with avocado, fresh tomato slices, and a fried egg. You can do anything you want with these oats, and the best part is that you don’t actually have to cook!
Morning Oats
Makes: 1 serving of perfect oatmeal
Total time: 2 minutes
For Dietary Restrictions
Gluten free: use GF oats (you can use regular oats if you don’t have a severe reaction to gluten, as the only risk would be a small amount of gluten from shared processing equipment
Dairy free: use coconut cream instead of milk-based cream.

Ingredients
1/3 cup old fashioned oats
scant 1/4 cup water
Optional toppings:
1 tsp sugar, honey, or maple syrup
dash of cinnamon, allspice, or nutmeg
fruit of choice: 1 peach, 2 plums or apricots, pitted fresh cherries, strawberries, etc.
Nuts/seeds: walnuts, pecans, sliced almonds, chia seeds, etc.
Directions
Step 1
Measure the oats and water and pour both into a microwaveable bowl.
Step 2
Microwave on high for 1 minute. Meanwhile, wash and slice your fruit.
Step 3
When the oats are done, add desired fruit, nuts, and spices to the bowl and top with a drizzle of cream and a sprinkle of sugar.
