Have you ever had shrimp & grits? It’s a classic Southern meal, and although it uses simple ingredients and comes together in no time, it tastes like a fancy restaurant meal— perfectly creamy grits (with a gentle undertone of white cheddar) and plump, juicy shrimp, with the bacon adding depth and the lemon juice brightening everything up. It’s impressive enough to serve to guests for a Cajun-themed dinner party, but easy enough to make on a weeknight.
I was completely blown away with how delicious this recipe was AND how easy it was to throw together. Shrimp and grits both cook in a matter of minutes (assuming you use quick-cooking grits— but even if you grab the wrong kind at the store, they’ll still be done in 20 minutes!) And the remaining ingredients are simple to prepare, so this is a dish you can throw together when you’re short on time.
