I’ve got a warm-weather menu for you this week— temps are hitting the 80s in the Midwest this week, so it’s time to eat all the summery foods we’ve been waiting for! I’m especially dying to taste the basil cream on those caprese sandwiches!
Just a note about the upcoming Mother’s Day… is there any day more filled with joy or fraught with complex emotions than this holiday? I’m not sure there is. I know this day can be difficult for many reasons, but for those who have struggled with infertility, I am especially thinking of you right now. Before we had Noah (it took us several years to get pregnant), I spent a few Mother’s Days in bed, hiding from the world, crying, and trying to survive one more Mother’s Day without being a mother. It was a really hard time. If you are there, know I am thinking of you this weekend and sending all my good vibes your way. And if you know someone struggling with infertility, make sure to give them all the space, tenderness, and love you can.

Chicken Teriyaki with Broccoli
This homemade chicken teriyaki is so easy to make! I love that it’s a one-pan dish. The ingredient list for the sauce is a little long, but don’t let it intimidate you. It’s just a matter of mixing everything up and throwing it in with the chicken.
Burgers & Fries with Roasted Green Beans
This is one of my favorite easy meals to have at home. The burgers come out fabulous, even without a charcoal grill (though of course you can grill them if you want!), and everything is so dip-able, so make sure to have some good condiments on hand.
Notes for This Week’s Menu
Aldi doesn't carry the following things you'll need for the teriyaki: sesame oil, cornstarch, & rice vinegar. You have a couple of options if you don't already have these ingredients at home: use Aldi's jarred teriyaki sauce instead (if that's the case, you can also skip the ginger & soy sauce); or sub vegetable oil and apple cider vinegar and just omit the cornstarch (the least flavorful option, but decent in a pinch!) Or you could make a separate grocery order, of course. The choice is yours :)
Aldi shoppers will also be using basil stir-in paste instead of fresh basil leaves this week. See the note in the recipe for instructions.
All recipes yield at least 4 servings; this week, expect to have leftovers of everything except the burgers.
Tip: Making your fries from scratch? Fry up the rest of the potatoes, thin-sliced, with bacon & eggs for a feast of a breakfast.
