This is an easy-to-prep, make-your-own-bowl night that is fun and flavorful–and it’s vegetarian! I’ve included a truly delicious Greek dressing recipe, but feel free to buy a premade one to save time.

Vegetarian Greek Grain Bowl
Cook time = 20 minutes

For Dietary Restrictions
Gluten free: use brown rice or quinoa instead of couscous
Dairy free: omit the feta cheese- if you want, you can sub with crumbled tofu for more protein. Try this tofu cheese recipe + marinade for that Greek flavor!
Kids Can Help
Open canned chickpeas, wash lettuce, and set toppings out in bowls (tip: use storage containers for serving so you can just pop the lid on to store!)
Ingredients
1 head romaine lettuce (or another leafy green)
2 roma tomatoes
1 english cucumber
1 red pepper
¼ red onion
1 ½ cups couscous, uncooked
1 15 oz can garbanzo beans, rinsed and drained
1 jar pitted Kalamata olives
8 oz container feta cheese
Dressing Ingredients
¼ cup extra virgin olive oil
¼ cup water
Juice of 1 lemon (about ¼ cup)
2 Tbsp red wine vinegar
½ tsp salt
2 tsp dried oregano
2 tsp sugar or honey
2 cloves garlic, minced (or use a garlic press!)
Directions
Step 1
Cook couscous according to package directions.
Step 2
While your grains are cooking, wash all veggies; chop them up and place each into separate containers.
Step 3
Open beans, olives, and cheese, and place into separate containers.
Step 4
Make the Greek dressing: crush or mince garlic, then place into a medium-size bowl. Add all other ingredients except oil; mix vigorously with a fork or whisk, then slowly pour in the oil while you continue to mix – this is called emulsifying! (Congratulations–now you know how to make homemade dressing, if you didn’t already!)
Step 5
Have all family members make their own bowl with the toppings of their choosing. You can drizzle the dressing on top, or put it on the side for little ones to use as a dip.
