Chile verde (Mexican pork with rice and beans), avgolemono (a Greek soup with chicken, lemon, & orzo), shrimp with white beans & toast, and mattar paneer (Indian comfort food!)
Hello, fellow home cooks! Today I’m excited to bring you 4 delicious meals — 2 old favorites, 2 new ones— that will make your house smell awesome. The chile verde is particularly stunning, especially when you pile your bowl full of toppings! I think I’ve eaten it 5 or 6 times in the past week, and I’m truly not tired of it yet! You can certainly freeze any leftovers, though, or consider throwing a bit into a tortilla with an egg and some black beans for some crazy good breakfast tacos!

Meals for the week:
Chile Verde with Rice & Beans
I love Chile Verde (pork shoulder simmered in salsa verde!). It’s a favorite that I keep coming back to when I eat at our local Mexican place. This one has a shortcut to save time without sacrificing flavor!
Mattar Paneer
Mattar Paneer simply means “peas and cheese” in Punjabi— paneer is a lovely, silky cheese that has a similar consistency to firm tofu (which is a cheaper option, as well as an easy substitution for my vegan friends.) This recipe is a sleeper fave, IMO… it doesn’t seem like it should be this good. It has a gentle flavor— nothing spicy or particularly strong— with a creamy note that makes it feel like comfort food.
Avgolemono (Greek chicken, lemon, & orzo soup)
This recipe is amazing. I don’t know why it took me so long to put it in our lineup of new recipes. I don’t make it that often, and I think I forgot how good it is! When I retested it last week, I couldn’t stop eating the velvety-smooth broth —a feat achieved through a unique process of blending broth, lemon juice, and tempered eggs.
Notes for This Week’s Menu
ALDI NOTES:
No leeks (shrimp stew.) Grab some elsewhere, or sub half an onion and a rib of celery.
No paneer— sub tofu.
No fresh parsley— can omit or use dried.
No cashew butter, garam masala, or bay leaves (no great subs for these— need to get elsewhere!)
Orzo: some Aldi’s may not carry this. You can grab another small pasta or substitute white rice.
Neither Kroger nor Aldi has Mexican oregano. Grab it at your local international store— its unique flavor is worth it!
