Hi everyone! I’m bringing back this graphic from last year. I haven’t seen it on my socials yet— too much else is going on in the world, perhaps? (Little bit of irony there). Still, it is noticeably lighter in the evenings as we’re sitting down for dinner— a small thing, but I’m grateful for it.
I’m also grateful to be healthy again— my whole family got the flu last week, and it was brutal (we forgot to get the vaccine, a mistake I’ll never make again.) We survived on toast, ramen, and fruit for an entire week, so it’s nice to be well enough to cook again. (The first thing I made was the cauliflower farfalle soup!) And once my taste buds have fully returned, I’ll be testing some new recipes, including homemade hamburger helper. (I know, I know) but the reviewers on this one are RAVING and I’m really curious!) If it’s good, you’ll see it in a few weeks.
Also! The Superbowl is February 9, so next Friday’s menu will have 4 recipes that would work for a weeknight meal OR a fun dish to serve at your Superbowl party! So that’s fun, I hope!

I think sea trout is underrated. It’s just as moist and flaky as salmon, with an even milder, sweeter taste. So if you think salmon is too fishy, trout might be the perfect substitute! And it makes for an amazing sheet pan meal — this recipe is one of the yummiest I’ve ever had (and it's so pretty!) Equally perfect whether you want to impress company or just make your family a delicious weeknight dinner.

One-pan meals are always a win in my book, plus this recipe is so much easier than your usual baked pastas, which require you to boil water, cook the pasta, and then assemble…and THEN bake for an hour, which is too long for a weeknight. But this recipe is maybe a third of the work/time!
